Seared Salmon and Miso Soba Noodle Salad

    Place salmon fillets skin-side down in a medium-hot pan.

    Sear for 4 minutes.

    Flip and sear for another 2 minutes.

    Cook soba noodles according to package directions.

    Rinse with cold water and drain.

    Whisk together miso paste , rice vinegar , sesame oil , honey , and ginger (minced) .

    Toss soba noodles with the miso dressing.

    Divide noodles between two bowls.

    Top with cucumber (sliced) , carrots (shredded) , and red onion (thinly sliced) .
