Seared Salmon and Miso Soba Noodle Salad
🥘 Ingredients

honey1 tbsp

miso paste2 tbsp

red onion (thinly sliced)1/4

rice vinegar2 tbsp

salmon fillets2
-
sesame oil1 tbsp

sesame seeds

soba noodles

1Place salmon fillets skin-side down in a medium-hot pan.salmon fillets: 2

2Sear for 4 minutes.

3Flip and sear for another 2 minutes.

4Cook soba noodles according to package directions.soba noodles

5Rinse with cold water and drain.

6Whisk together miso paste , rice vinegar , sesame oil , honey , and ginger (minced) .miso paste: 2 tbsp, rice vinegar: 2 tbsp, sesame oil: 1 tbsp, honey: 1 tbsp, ginger (minced): 1 tsp

7Toss soba noodles with the miso dressing.

8Divide noodles between two bowls.

10Place seared salmon on top.

11Drizzle with extra miso dressing if desired.
